"The Kusama" is the art-inspired macaron we are doing this month, paying homage to the revered Japanese contemporary artist, Yayoi Kusama. The artist's most iconic and ubiquitous subject matter is the Kabocha (Japanese pumpkin). Our macaron filling is made of Kabocha braised with dashi (kelp and bonito stock) and mirin (Japanese sweet rice wine), a classic dish one would find in a Japanese izakaya. The shells mimic the pattern of her celebrated Kabocha sculptures.
